Think ocean shores, dewy Amazonian rainforests, think tropical heat and you’ve got the perfect back drop for this dynamite berry, Acai.
Acai is an amazing superfood which is low in cholesterol and sodium and a great source of dietary fibre. Consider it a blueberry on steroids! The Acai berry is tiny and very fragile and mostly found in Brazil, and like me doesn’t travel well. Therefore you won’t find it fresh on our shores and is usually sold either as a powder, liquid or frozen. I prefer the frozen form which comes in portion side pouches.
I’ll be honest, I was never a big fan of berries – as a flavouring and didn’t gush over Acai like my daughters, that is until I started experimenting in the kitchen. Like most things, I eased in and started with a somewhat subtle, creamier, coconut based version which I must say is amazing. However once I got the taste for Acai, I jumped right in and developed this fully-loaded, very berry version.

- 1 pouch of frozen acai
- 1/4 cup of frozen mango
- 1/4 cup of berries (blue or black)
- 1/4 cup of coconut water
- 1 tbsp. of desiccated coconut
- Squeeze of lemon juice
- Fruit for topping
- Blitz all ingredients in a food processor til smooth and creamy.
- Top with your choice of fruits, granola, nuts and / or seeds.
