Indulgent scrambled eggs made easy

Indulgent scrambled are eggs made easy with this recipe!  Learn how to perfect, humble scrambled eggs into a truly indulgent, special occasion dish or when only comfort food will do with this easy to follow recipe. Note, this is an indulgent take on traditional scrambled eggs with of good-quality butter and full cream thus, not for everyday fare. But when those situations arise, don’t hold back!

Remember, eggs are the food hero of this dish so it’s important to use fresh, free range farm eggs.


        • 2 fresh eggs (per person)
        • 1 tablespoon of butter
        • 20 mls of cream
        • salt and pepper to season


  1. In a bowl crack the eggs and add the cream and lightly beat with a folk.  Do not beat too vigorously.
  2. In a non-stick saucepan or fry pan gently melt butter – do not burn and reduce heat if required.
  3. With the saucepan back on the heat add the egg mix.  Use a spatula to gently move the mix from the outside to the inside.  Avoid mixing the eggs.  Running the spatula across the bottom of the pan will start to create ribbons.
  4. At any time, the saucepan gets to hot – take it off the heat and continue.
  5. The process should be quick and take approx. 4 minutes.  Do not overwork the eggs and keep the consistency loose and light.
  6. Always plate up the eggs a little under done as they will keep cooking by the time they’re on the table.

Serving suggestions:

  • Serve with grated parmesan cheese
  • Include fresh dill or chives into the eggs
  • Truffle oil or salt!!!
