Raw Broccoli and Superfood Salad


  • 2 cups of finely shaved broccoli
  • 1/2 head of finely sliced fennel
  • Several stalks of parsley roughly chopped
  • Several sprigs of fresh mint
  • Salt and pepper to season
  • Generous sprinkle of chia seeds and sesame seeds


  • 1/4 cup of coconut cream
  • 2-3 tbsp. of apple cider vinegar
  • Salt and pepper to season

Toppings (optional)

  • Goji berries or grilled bacon pieces


  1. Use a food processor or a mandolin to finely shred the broccoli and fennel, making sure to include the stalks. Combine with parsley and mint.
  2. Prepare dressing by simply mixing together the dressing ingredients in a cup and pour over the salad.
  3. Gently combine, sprinkle with seeds and season with salt and pepper.
  4. Add toppings of choice and enjoy!
