Ingredients
- 2 cups of finely shaved broccoli
- 1/2 head of finely sliced fennel
- Several stalks of parsley roughly chopped
- Several sprigs of fresh mint
- Salt and pepper to season
- Generous sprinkle of chia seeds and sesame seeds
Dressing
- 1/4 cup of coconut cream
- 2-3 tbsp. of apple cider vinegar
- Salt and pepper to season
Toppings (optional)
- Goji berries or grilled bacon pieces
Method
- Use a food processor or a mandolin to finely shred the broccoli and fennel, making sure to include the stalks. Combine with parsley and mint.
- Prepare dressing by simply mixing together the dressing ingredients in a cup and pour over the salad.
- Gently combine, sprinkle with seeds and season with salt and pepper.
- Add toppings of choice and enjoy!
