This roasted popcorn cauliflower recipe is so versatile it can be served as a quick snack, side or main meal. If you’re planning on whipping up a Mexican fiesta this dish is perfect alongside Vegan Chilli Con Vegetables.

Ingredients

  • 1/2 Head Large Cauliflower

  • 2 Tsp Sweet Paprika

  • 2 Tsp Chipotle Powder

  • 2-3 Tbsp Coconut Oil (melted)

  • Salt and Pepper

  • Sriracha Vegan Mayo
  • 3 Tbsp Vegan Mayonnaise

  • 1 Tbsp Sriracha Sauce

  • Lemon Juice

  • Salt and Pepper

Directions

  • Preheat oven to 160 degrees.
  • Line a baking tray with baking paper.
  • Cut cauliflower into florets including the stalks. Place in a mixing bowl or plastic bag.
  • Add in the spices, salt and pepper and mix until the cauliflower is nicely coated.
  • Next pour in the oil and mix through.
  • Turn cauliflower onto the tray and spread out to separate as much as possible.
  • Bake in oven for approx. 15 – 20 minutes or until cauliflower turns golden.
  • Sriracha Vegan Mayo
  • Combine mayonnaise, sriracha and lemon juice and mix well.
  • Season to taste and turn out into a serving dish.

Notes

  • This will serve main meal portions or a platter for snacking.
