Ingredients
- 2 tbsp. of coconut oil
- small onion, finely diced
- 2 cups of cauliflower (or half a head), chopped
- 1-2 tsp of chilli powder
- 1 tsp of paprika
- salt and pepper
- 1/4 cup of water
- Gluten free corn chips
Guacamole
Ingredients
- 1 avocado
- juice from one lime of lemon
- 1 dollop of dairy free yoghurt
- salt and pepper
- several leaves of mints, finely sliced
Method
- Sautee onions in coconut oil in a frying pan over a medium heat until translucent.
- Add cauliflower, spices and season with salt and pepper. Fry to golden brown and stir to avoid catching or burning.
- Add water to the cauliflower mix and allow to gently simmer.
- Remove from heat when mixture resembles mince.
- To make guacamole; combine all ingredients in bowl and mash with a fork.
- Place up by arranging the nacho chips along side the cauliflower mince and top generously with guacamole.
