Vegetarian nachos with cauliflower faux mince

Looking for a meat free Monday option? We gotcha covered! Versatile and nutrient rich cauliflower is the perfect choice as a faux mince to beef up this popular Mexican favourite.

Serve alongside a zesty and fresh guacamole, your choice of gluten free nacho chips for a non-greasy and satisfying meal or snack your family will love!

Serves 1-2


  • 2 tbsp. of coconut oil
  • small onion, finely diced
  • 2 cups of cauliflower (or half a head), chopped
  • 1-2 tsp of chilli powder
  • 1 tsp of paprika
  • salt and pepper
  • 1/4 cup of water
  • Gluten free corn chips



  • 1 avocado
  • juice from one lime of lemon
  • 1 dollop of dairy free yoghurt
  • salt and pepper
  • several leaves of mints, finely sliced


  1. Sautee onions in coconut oil in a frying pan over a medium heat until translucent.
  2. Add cauliflower, spices and season with salt and pepper. Fry to golden brown and stir to avoid catching or burning.
  3. Add water to the cauliflower mix and allow to gently simmer.
  4. Remove from heat when mixture resembles mince.
  5. To make guacamole; combine all ingredients in bowl and mash with a fork.
  6. Place up by arranging the nacho chips along side the cauliflower mince and top generously with guacamole.
